Yo Ho Ho and a bottle of Rum drink and the devil has done the rest!
So I hear it’s the season to be jolly! Well traditionally speaking it is, however I have often found it is the time for mass messiness! Perhaps it’s the industry I chose to find fame and fortune, or the company I keep because I don’t seem to remember many years in the last twenty that I have not been on a rollercoaster of partying and mayhem.
Staff parties mixed with the best gigging season of the year starts December off nicely, this year a trip to the Prodigy @ Brixton is my Christmas treat! Very cosy hey, no doubt an all-nighter that will be hurting for at least a week. Then a few staff parties (working and attending), salsa and ceroc events and plenty of rum I’m sure!
A yearly visit to the Bali brassiere for an alternative experience courtesy of Ralli Hall is a must (more rum) and then a huge new year’s do courtesy of Cubashe dance promotions, lots of Cubans and lots of … yup… RUM! To be honest I must admit my trusty hip flask will never be too far away if I need a quick nip anytime during this period.
So after the partying of December and before we bring the new year in there is the small matter of crimbo. Yes it is about relaxation family and friends, and nowadays for me all about my daughter, however… I shall be indulging in some drinking! Cosy, warm, homely, comforting drinking at that and maybe a cigar or two. For many years I got up and went downstairs and opened the doors to the world for a seasonal drink, but not now, those boots have been hung but I don’t forget, so a big cheers to all you landlords who raise a glass with us on the December 25th, big up to you all!
So it’s time for a treat and rum goes splendidly with chocolate, let’s indulge, pile on a few pounds and kick back a little!
A few years ago Barlogic invented a couple of new cocktails at Table restaurant (now the Chilli Pickle) in town for the launch of Brighton’s first ever chocolate festival. With our ties to Cuban salsa we felt a rum based baby was the way forward, and its simplicity makes it perfect!
BarLogic Recipe : The Cuban chocolate chocolate
Purchase online from Amazon or Funkin direct one pouch of liquid chocolate by Funkin, cost around £6.00 get plenty of use over Christmas from it.
Pour all ingredients into a cocktail shaker with ice, shake well and strain into a martini glass! Bloody yummy
A nice hearty slug of Havana Especial or 1 and ½ shots.
Half a shot of Kahlua coffee liqueur.
One ounce of chocolate syrup by Funkin (If no funkin syrup be inventive)
One ounce of milk, One ounce of cream – Mixed together this is known as half and half.
If you want to alter these measures slightly …. Do it!!! Enjoy it, mess with it and don’t pretentious it J (Not sure that’s correct English!)

BarLogic Recipe : um Eggnog
1 egg white
1 tablespoon Simple Syrup (sugar syrup, can be made at home by melting sugar and water on a stove)
1 tablespoon confectioners’ sugar
1/2 cup milk
1/8 cup cream or half-and-half
1/4 cup rum
Freshly grated nutmeg, for garnish
Pour all ingredients into a drink shaker with ice. Shake well and pour through a strainer into a highball glass or glass mug. Grate the fresh nutmeg over the glass, but not too much, as it is strong!
